Instructions

1. In a bowl, coat the chicken breast with adobo seasoning and let it marinate for at least 10 minutes.

2. Heat olive oil in a skillet over medium heat. Add the marinated chicken and cook for about 6-7 minutes on each side until fully cooked. Remove from skillet and shred the chicken.

3. In the same skillet, add sliced bell peppers and onions. Sauté for about 5-7 minutes until they are tender.

4. In a separate pan, heat the cauliflower rice for about 5 minutes until warm.

5. To assemble, place a serving of cauliflower rice in a bowl, top with shredded adobo chicken, sautéed vegetables, a dollop of Greek yogurt, and sprinkle with shredded cheese and parsley.
