Instructions
1.
1. Rinse the brown rice under cold water and combine it with 2 cups of water or vegetable broth in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until the rice is tender and the liquid is absorbed.

2. While the rice is cooking, preheat your air fryer to 400°F (200°C).

3. In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Coat the salmon filets with this mixture.

4. Place the salmon filets in the air fryer basket in a single layer. Cook for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

5. If using fresh spinach, sauté it in a pan with a little olive oil until wilted. If using frozen spinach, heat it according to package instructions.

6. Serve the air-fried salmon over a bed of brown rice, topped with sautéed spinach.
