Instructions

    Prepare the vegetables: In a large bowl, combine the shredded cabbage, carrots, sliced radishes, and cooked edamame. Toss well to mix. (5 minutes)

    Make the dressing: In a small bowl, whisk together 3 tablespoons of peanut butter (low sugar), 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, and 1 teaspoon of sesame oil until smooth. (3 minutes)

    Cook the tofu: In a non-stick skillet, heat a little oil over medium heat. Add the cubed tofu and cook until golden and crispy on all sides, about 5-7 minutes. (7 minutes)

    Assemble the salad: Add the crispy tofu to the vegetable mixture. Drizzle the dressing over the salad and toss gently to combine. (2 minutes)
