Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a bowl, marinate the chicken breasts in low-fat buttermilk for at least 30 minutes to tenderize.
3.
In a separate bowl, mix the whole wheat flour, garlic powder, paprika, salt, and pepper.
4.
Remove the chicken from the buttermilk, allowing excess to drip off, then coat each piece in the flour mixture.
5.
Next, dip the chicken back into the buttermilk and then coat with corn flake crumbs.
6.
Place the coated chicken breasts on a baking sheet lined with parchment paper and spray lightly with cooking spray.
7.
Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and golden brown.
8.
While the chicken is baking, prepare the corn. Place the husked corn in the air fryer and cook at 400°F (200°C) for 10-12 minutes, turning halfway through.
9.
Serve the baked chicken with the air-fried corn on the cob.
