Instructions
1.
Preheat your oven to 400°F (200°C).
2.
Season the pork chops with garlic powder, onion powder, oregano, salt, and pepper on both sides.
3.
Heat olive oil in a skillet over medium heat. Sear the pork chops for 2-3 minutes on each side until golden brown.
4.
Transfer the pork chops to a baking dish and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
5.
While the pork is baking, sauté the sliced zucchini in the same skillet for about 5-7 minutes until tender. Add spinach if using and cook until wilted.
6.
Serve the baked pork chops alongside the sautéed zucchini.
