Instructions

    1. Start by steaming the cauliflower florets until tender, about 10 minutes.

    2. While the cauliflower is steaming, heat olive oil in a large skillet over medium heat.

    3. Add the sliced red onion and asparagus to the skillet, sautéing for about 5 minutes until they begin to soften.

    4. Season the chicken strips with garlic powder, onion powder, salt, and pepper, then add them to the skillet. Cook for 5-7 minutes until the chicken is cooked through.

    5. Pour in the balsamic vinegar and soy sauce, stirring to coat the chicken and vegetables. Cook for an additional 2-3 minutes until the sauce thickens slightly.

    6. Meanwhile, mash the steamed cauliflower with a fork or potato masher, adding a pinch of salt and pepper to taste.

    7. Serve the balsamic chicken and vegetables over a bed of mashed cauliflower.
