“Salad of Zucchinitomatoes barley lentils and potatoes”

Instructions
1.
In a large bowl, combine the cooked barley and lentils. (5 minutes)
2.
Add the diced zucchini, cherry tomatoes, cucumbers, green beans, and boiled potatoes. (5 minutes)
3.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. (2 minutes)
4.
Pour the dressing over the salad and toss gently to combine. (3 minutes)
5.
Garnish with fresh herbs before serving. (2 minutes)

1 cup cooked barley

1 cup cooked lentils
3.
1 medium zucchini, diced
4.
1 cup cherry tomatoes, halved
5.
1 cup cucumbers, sliced
6.
1 cup green beans, trimmed and chopped
7.
1 medium potato, boiled and diced
8.
2 tablespoons olive oil
9.
1 tablespoon lemon juice
10.
Salt and pepper to taste
11.
Fresh herbs (parsley or cilantro) for garnish
