Those BBQ Jackfruit and beef tacos look so delicious! Jackfruit is a fantastic plant-based alternative and its great that you enjoyed it. Plus adding some avocado for that creamy texture is always a good choice.

Instructions

    In a skillet, heat olive oil over medium heat. Add the shredded BBQ jackfruit and cook for about 5 minutes until heated through.

    Stir in corn, cumin, salt, and pepper. Cook for an additional 2-3 minutes until everything is well combined.

    Warm the corn tortillas in a separate pan or microwave until pliable.

    Assemble the tacos by placing a generous amount of the jackfruit mixture on each tortilla.

    Top with shredded cheese, sliced avocado, and spinach if using.
