Mixed greens veggies and bean burrito in low carb wrap with salsa guac plain greek yogurt

Instructions

  • 1.

    In a skillet, heat the black beans over medium heat for about 5 minutes until warm.

  • 2.

    Add the diced bell peppers and tomatoes to the skillet, cooking for an additional 3-4 minutes until softened.

  • 3.

    Stir in the corn and mixed greens, cooking until the greens are wilted, about 2 minutes.

  • 4.

    Warm the low carb wraps in a separate pan for about 1 minute on each side.

  • 5.

    Assemble the burritos by placing the bean and veggie mixture in the center of each wrap.

  • 6.

    Top with shredded cheese, a dollop of Greek yogurt, salsa, and guacamole.

  • 7.

    Roll the wraps tightly and serve with extra salsa on the side.

    1 can black beans, rinsed and drained

    1 cup mixed greens (spinach, arugula, etc.)

  • 4.

    1 cup diced bell peppers

    1 cup diced tomatoes

    1/2 cup corn (fresh or frozen)

  • 7.

    1/2 cup plain Greek yogurt

  • 8.

    1/2 cup salsa

  • 9.

    1/2 cup guacamole

  • 10.

    1/2 cup shredded low-fat cheese
