I had leftover beans from yesterday and added this to wholewheat toast. I wasnt that hungry so this did me well. I did follow this up with some tea and an apple after.

Instructions

  • 1.

    Toast the whole wheat bread slices in a toaster or on a skillet until golden brown (about 3-5 minutes).

  • 2.

    In a small pan, heat the olive oil over medium heat.

  • 3.

    Add the cooked beans, garlic powder, onion powder, salt, and pepper. Stir and cook for about 2-3 minutes until heated through.

  • 4.

    If using, add the fresh spinach and cook until wilted (about 1 minute).

  • 5.

    Top each slice of toasted bread with the bean mixture.

  • 6.

    Serve with an apple and a cup of unsweetened tea.
