Instructions

  • 1.

    In a large pot, brown the lean ground beef over medium heat for about 5-7 minutes, breaking it apart as it cooks.

  • 2.

    Add the chopped onion, garlic, and bell pepper to the pot. Sauté for another 5 minutes until the vegetables are softened.

  • 3.

    Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for 1-2 minutes to toast the spices.

  • 4.

    Add the crushed tomatoes, kidney beans, black beans, spinach, and beef broth. Stir well to combine.

  • 5.

    Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, stirring occasionally.

  • 6.

    Taste and adjust seasoning if necessary. Serve hot.

    1 can (15 oz) kidney beans, rinsed and drained

    1 can (15 oz) black beans, rinsed and drained

  • 4.

    1 can (28 oz) crushed tomatoes (no added sugar)

  • 5.

    1 medium onion, chopped

  • 6.

    2 cloves garlic, minced

  • 7.

    1 bell pepper, chopped (any color)

  • 8.

    2 cups spinach, chopped

  • 9.

    2 tbsp chili powder

  • 10.

    1 tsp cumin

  • 11.

    1 tsp paprika

  • 12.

    Salt and pepper to taste

  • 13.

    1 cup low-sodium beef broth
