Instructions

  • 1.

    Heat olive oil in a large skillet over medium-high heat (about 2 minutes).

    Add the sliced beef to the skillet, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through.

  • 3.

    While the beef is cooking, steam the broccoli florets until tender (about 3-4 minutes).

  • 4.

    In a large bowl, combine the mixed salad greens, cherry tomatoes, and goat cheese.

  • 5.

    Once the beef is cooked, add it and the steamed broccoli to the salad bowl.

  • 6.

    Drizzle with honey Dijon dressing and toss gently to combine.

  • 7.

    Top with whole wheat mini croutons before serving.
