Tritip sweet potato with fat free skyr sauteed baby bok choy

That looks great Amy quite a nice start to this weeks dinner goal. A balanced meal some good protein and some good fiber as well. Lets keep this up youre doing good!

Instructions

  • 1.

    1. Start by boiling water in a pot. Add the cubed sweet potato and cook for about 15 minutes or until tender. Drain and mash with a fork, adding a pinch of salt if desired.

  • 2.

    2. While the sweet potato is cooking, heat olive oil in a large skillet over medium-high heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.

  • 3.

    3. Add the sliced beef to the skillet, cooking for about 5-7 minutes until browned and cooked through. Season with salt and pepper.

  • 4.

    4. Add the broccoli florets and bok choy to the skillet, stirring well. Pour in the soy sauce and cook for an additional 5 minutes until the vegetables are tender but still crisp.

  • 5.

    5. Serve the beef and broccoli mixture over a bed of mashed sweet potato, topped with a dollop of fat-free skyr.

    2 cups baby bok choy, chopped

    1 medium sweet potato, peeled and cubed

    1 cup fat-free skyr or Greek yogurt

  • 6.

    2 tablespoons low-sodium soy sauce

  • 7.

    1 tablespoon olive oil

  • 8.

    2 cloves garlic, minced

  • 9.

    1 teaspoon ginger, minced

  • 10.

    Salt and pepper to taste
