Instructions
1.
Preheat your oven to 375°F (190°C).
2.
In a large skillet, cook the lean ground beef over medium heat until browned, about 5-7 minutes. Drain excess fat if necessary.
3.
Add diced sweet potatoes, black beans, cumin, chili powder, salt, and pepper to the skillet. Cook for another 10 minutes until sweet potatoes are tender.
4.
Spread a thin layer of enchilada sauce on the bottom of a baking dish.

Fill each tortilla with the beef and sweet potato mixture, roll them up, and place them seam-side down in the baking dish.
6.
Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
7.
Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
8.
Serve with mashed avocado and fresh strawberries on the side.

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

8 whole wheat tortillas

1 cup low-fat cheese, shredded
6.
1 cup enchilada sauce (low-sugar)

2 ripe avocados, mashed
8.
1 cup fresh strawberries, for serving
9.
Salt and pepper to taste
10.
1 tsp cumin

1 tsp chili powder
