Grilled beef kebab and salad

Instructions

  • 1.

    In a bowl, mix the ground beef with garlic powder, onion powder, paprika, salt, and pepper. Form into kebabs (about 4-6).

  • 2.

    Preheat a grill or grill pan over medium-high heat. Cook the kebabs for about 5-7 minutes on each side, or until fully cooked.

  • 3.

    While the kebabs are cooking, prepare the salad. In a large bowl, combine mixed greens, shredded carrots, sesame seeds, and cashews.

  • 4.

    In a small bowl, whisk together olive oil and vinegar. Drizzle over the salad and toss to combine.

  • 5.

    Serve the kebabs alongside the salad, topped with crispy tortilla strips if desired.

    1 tablespoon olive oil

    1 tablespoon vinegar (balsamic or apple cider)
