Instructions
1.
1. Preheat your sous vide water bath to 130°F (54°C) for medium-rare steak.

2. Season the flank steak with salt and pepper, then vacuum seal it in a bag.
3.
3. Submerge the sealed steak in the water bath and cook for 8 hours.

4. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add garlic and sauté for 1 minute.

5. Add the oyster and shiitake mushrooms to the skillet and cook until tender, about 5-7 minutes. Season with salt and pepper.

6. In another pan, heat the remaining olive oil and sauté the kale until wilted, about 3-4 minutes. Add lemon juice if desired.

7. Once the steak is done, remove it from the bag, pat dry, and sear in a hot skillet for 1-2 minutes on each side for a crust.
8.
8. Slice the steak against the grain and serve with mushrooms and sautéed kale.
