Instructions
1.
1. Start by laying out the whole grain bread slices on a clean surface.
2.
2. Spread 1 tablespoon of Dijon mustard on each slice of bread.
3.
3. Layer 2 oz of lean roast beef on four of the slices.
4.
4. Top the roast beef with arugula, onion slices, and pickles.
5.
5. Place the remaining slices of bread on top to form sandwiches.
6.
6. Cut each sandwich in half and serve with a side of cubed watermelon.

8 oz lean roast beef (preferably grass-fed)

2 cups arugula
4.
1 medium onion, thinly sliced
5.
8 slices of pickles

4 tablespoons Dijon mustard
