Instructions

  • 1.

    In a large pot, brown the beef cubes over medium heat for about 5-7 minutes until browned on all sides.

  • 2.

    Add the chopped carrots, celery, and potatoes to the pot, stirring to combine.

  • 3.

    Pour in the beef broth and diced tomatoes, then add garlic powder, onion powder, thyme, salt, and pepper.

  • 4.

    Bring the mixture to a boil, then reduce heat to low and cover. Simmer for 45 minutes, stirring occasionally.

  • 5.

    In the last 15 minutes of cooking, add the uncooked brown rice to the pot and stir well.

  • 6.

    Once the rice is cooked and the vegetables are tender, serve hot with a dollop of light sour cream on top.

    1 lb lean beef (chuck or sirloin), cut into cubes

    4 cups low-sodium beef broth

    1 can diced tomatoes (14.5 oz), no added sugar

    1 tsp garlic powder

    1 tsp onion powder

  • 10.

    1 tsp dried thyme

  • 11.

    Salt and pepper to taste

  • 12.

    1/2 cup light sour cream (for serving)
