Instructions

In a large bowl, combine the diced beetroots, chopped celery, grated carrots, halved cherry tomatoes, chopped spring onions, and spinach. (5 minutes)

In a separate bowl, mix the Greek yogurt, honey, lemon juice, salt, and pepper to create a dressing. (3 minutes)

Pour the dressing over the salad and toss gently to combine. (2 minutes)

Top with cubed cheese, sliced banana, mixed nuts and seeds, and blueberries. (5 minutes)

Serve immediately or chill in the refrigerator for 30 minutes for enhanced flavors.
