Today I enjoyed leftovers from yesterdays dinner and I must say it was one of the best combinations of protein vegetables and fruits Ive ever had in a meal. This has quickly become one of my favorite meals that Ive creatednot just since starting this program but since I began cooking altogether. I truly love it. During lunch I practiced mindfulness and I noticed a shift in my thoughts around food. In the past under stress I would often turn to fast food for comfort. I believed it provided relief in those moments. However I now find myself forming healthier associations with food inspired by the general tips youve shared. It feels almost surprising to say but Im now appreciating the sounds the tastes the flavors and even the appearance of the food. Knowing that it nourishes my body and contributes to my energy has transformed how I view meals. Logging my meals has also become an opportunity for reflection allowing me to truly savor the experience. This particular meal was a success in every waythere were no struggles just the satisfaction of a delicious and nutritious leftover. Im so excited about this dish that I cant wait to share it with others.

Instructions

  • 1.

    In a large bowl, combine the black beans, cucumber, cherry tomatoes, red onion, peach, and corn.

  • 2.

    In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.

  • 3.

    Pour the dressing over the salad and toss gently to combine.

  • 4.

    Garnish with fresh cilantro if desired.

  • 5.

    Serve immediately or refrigerate for 30 minutes to let the flavors meld.

    1 medium cucumber, diced

    2 tablespoons olive oil
