Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

  • 2.

    Add diced carrots and cook for 3-4 minutes until slightly tender.

  • 3.

    Stir in the cooked brown rice and black beans, mixing well (about 2 minutes).

  • 4.

    Push the rice mixture to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until fully cooked (about 3 minutes).

    Mix the scrambled eggs into the rice and bean mixture.

  • 6.

    Add chopped spinach, salsa, dill, salt, and pepper. Stir everything together and cook for an additional 2-3 minutes until heated through.
