Instructions
1.
Preheat your oven to 400°F (200°C).

Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, salt, and pepper. Place cut-side down on a baking sheet and roast for 30-35 minutes until tender.

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced eggplant and cook for about 5-7 minutes until softened.

Add the crumbled tempeh to the skillet and cook for another 5 minutes, stirring occasionally.

Pour in the tomato sauce, garlic powder, onion powder, salt, and pepper. Simmer for 10-15 minutes to allow flavors to meld.

Once the spaghetti squash is done, use a fork to scrape out the strands and place them on plates.
7.
Top the spaghetti squash with the eggplant and tempeh bolognese. Sprinkle with cheese if desired and garnish with fresh basil.

2 cups tomato sauce (low-sugar)

Salt and pepper to taste

1/2 cup shredded low-fat cheese (optional)
10.
Fresh basil for garnish (optional)
