Eggplant and tempeh bolognese with spaghetti squash and a sprinkle of cheese

Its great to see that you indeed did the tempeh bolognese with eggplant with the leftovers from the spaghetti squash The sprinkle of cheese adds a bit of healthy fats and lots of deliciousness it was a good call! Great mix of fiber and protein.

Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, salt, and pepper. Place cut-side down on a baking sheet and roast for 30-35 minutes until tender.

  • 3.

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced eggplant and cook for about 5-7 minutes until softened.

  • 4.

    Add the crumbled tempeh to the skillet and cook for another 5 minutes, stirring occasionally.

  • 5.

    Pour in the tomato sauce, garlic powder, onion powder, salt, and pepper. Simmer for 10-15 minutes to allow flavors to meld.

  • 6.

    Once the spaghetti squash is done, use a fork to scrape out the strands and place them on plates.

  • 7.

    Top the spaghetti squash with the eggplant and tempeh bolognese. Sprinkle with cheese if desired and garnish with fresh basil.

    1 cup tempeh, crumbled

    2 cups tomato sauce (low-sugar)

    1 tablespoon olive oil

    1 teaspoon garlic powder

  • 7.

    1 teaspoon onion powder

  • 8.

    Salt and pepper to taste

  • 9.

    1/2 cup shredded low-fat cheese (optional)

  • 10.

    Fresh basil for garnish (optional)
