Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a shallow bowl, whisk the egg whites with garlic powder, salt, and pepper.
3.
Place the breadcrumbs in another shallow bowl.
4.
Dip each chicken breast in the egg whites, then coat with breadcrumbs, pressing to adhere.
5.
Place the breaded chicken on a baking sheet lined with parchment paper.
6.
Bake for 20 minutes or until the chicken is cooked through and golden brown.
7.
While the chicken is baking, prepare the salad by combining mixed greens, shredded carrots, olive oil, lemon juice, salt, and pepper in a large bowl.
8.
Once the chicken is done, slice it and serve it on top of the salad.
