Instructions
1.
Preheat your oven to 400°F (200°C).

Wash and slice the sweet potato in half lengthwise. Place it on a baking sheet, cut side up, and drizzle with olive oil. Season with salt and pepper. Bake for 25 minutes or until tender.

While the sweet potato is baking, bring a pot of water to a boil. Add the broccoli, carrots, and green beans. Blanch for 3-4 minutes until bright and tender-crisp. Drain and set aside.

In a skillet, cook the lean protein patties over medium heat according to package instructions, about 5-7 minutes per side.

In the same skillet, add the bacon bits and sauté for 1-2 minutes until crispy. Add the blanched vegetables and toss to combine. Season with salt and pepper to taste.
6.
Serve the protein patties alongside the sautéed vegetables and the baked sweet potato.
