Instructions

  • 1.

    1. Preheat your oven to 400°F (200°C).

  • 2.

    2. In a large bowl, combine broccoli, carrots, and olive oil. Toss to coat evenly.

  • 3.

    3. Spread the vegetables on a baking sheet and season with salt, pepper, and oregano.

  • 4.

    4. Roast in the oven for about 15-20 minutes, or until tender and slightly caramelized.

  • 5.

    5. In the last 5 minutes of roasting, add the cherry tomatoes and mozzarella balls to the baking sheet.

  • 6.

    6. Remove from the oven and stir in the beans. Serve warm.
