Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a pot, combine farro and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20 minutes until tender. Drain any excess liquid.

  • 3.

    While the farro cooks, toss the chopped cauliflower with olive oil, garlic powder, onion powder, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden brown.

  • 4.

    In a skillet, heat a little olive oil over medium heat. Add the sliced cabbage and sauté for about 5-7 minutes until tender. Season with salt and pepper.

  • 5.

    In a large bowl, combine the roasted cauliflower, cooked farro, and tomato sauce. Mix well.

  • 6.

    Serve the cauliflower and farro mixture alongside the sautéed cabbage, topped with chia seeds and fresh herbs.

  • 10.

    Salt and pepper to taste

    Fresh herbs (like parsley or basil) for garnish
