Instructions

    1. Preheat your oven to 400°F (200°C).

    2. In a large bowl, toss the diced red potatoes with olive oil, garlic powder, salt, and pepper.

    3. Spread the potatoes on a baking sheet and roast for 15 minutes.

  • 4.

    4. While the potatoes are roasting, steam the broccoli and cauliflower until tender, about 5-7 minutes.

    5. In a small bowl, mix Greek yogurt with lemon juice, salt, and pepper to create a creamy dip.

  • 6.

    6. Once the potatoes are golden brown, remove them from the oven and serve alongside the steamed vegetables and yogurt dip.
