Instructions
1.
1. Heat olive oil in a non-stick skillet over medium heat.

2. Add the diced mushrooms and sauté for about 3-4 minutes until they are soft.

3. Add the broccoli florets and cook for another 3-4 minutes until they are tender.

4. Stir in the chopped spinach and chili, cooking until the spinach wilts.

5. In a bowl, whisk the eggs with salt and pepper, then pour over the vegetables in the skillet.

6. Sprinkle the low-fat cheddar cheese on top and cover the skillet with a lid.

7. Cook for about 5-7 minutes until the eggs are set and the cheese is melted.
8.
8. Serve warm and enjoy your healthy broccoli and cheese dish!
