Instructions
1.
1. Preheat your oven to 400°F (200°C).
2.
2. In a large bowl, toss the broccoli, cauliflower, and carrots with olive oil, garlic powder, salt, and pepper.

3. Spread the vegetables on a baking sheet and roast for 10 minutes.
4.
4. While the vegetables are roasting, season the flounder fillets with salt, pepper, and lemon juice.
5.
5. After 10 minutes, remove the vegetables from the oven and push them to one side of the baking sheet.

6. Place the flounder fillets on the other side of the baking sheet.
7.
7. Return the baking sheet to the oven and roast for an additional 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
8.
8. Serve the flounder alongside the roasted vegetables.

4 flounder fillets (about 4 oz each)

2 cups broccoli florets
3.
2 cups cauliflower florets
4.
2 cups sliced carrots
5.
2 tablespoons olive oil
6.
1 teaspoon garlic powder
7.
Salt and pepper to taste

1 tablespoon lemon juice
