I had an egg topped rice bowl this afternoon. My husband made this for me as I had my hands full with a home project (sorting out the nursery). We left out the red wine vinegar and substituted the cherry tomatoes for a normal tomato. Honestly I am still full while I wait for dinner! This was a hit Ill be trying again! Although I do have brown rice left so I may have it again tomorrow.

Instructions

  • 1.

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the broccoli florets and sauté for about 5 minutes until tender. (5 minutes)

  • 2.

    Push the broccoli to one side of the skillet and crack the eggs into the other side. Scramble the eggs until fully cooked. (3-4 minutes)

  • 3.

    Add the cooked brown rice to the skillet, mixing everything together. Season with salt and pepper to taste. (2 minutes)

  • 4.

    In a separate bowl, toss the fresh spinach and diced tomato with the remaining olive oil. (2 minutes)

  • 5.

    Serve the rice mixture topped with sliced avocado and the spinach-tomato salad on the side.

    1 ripe avocado, sliced
