Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

    In a large bowl, toss the broccoli florets with olive oil, garlic powder, salt, and pepper.

    Spread the broccoli on a baking sheet and roast for 15 minutes.

    While the broccoli is roasting, season the tilapia fillets with salt, pepper, and lemon juice.

  • 5.

    In a skillet over medium heat, melt the vegan butter and cook the tilapia for about 4-5 minutes on each side until golden brown and cooked through.

    Add the sun-dried tomatoes to the skillet during the last minute of cooking.

  • 7.

    Serve the tilapia alongside the roasted broccoli, garnished with additional sun-dried tomatoes if desired.
