Instructions
1.
Preheat your oven to 350°F (175°C).

In a bowl, whisk together the eggs, salt, and pepper until well combined.
3.
In a skillet, heat the olive oil over medium heat. Add the chopped broccoli and sauté for about 3-4 minutes until slightly tender.
4.
Pour the egg mixture over the broccoli in the skillet. Add the mozzarella cherry tomatoes and optional spinach on top.
5.
Cook on the stove for 2-3 minutes until the edges start to set, then transfer the skillet to the preheated oven.
6.
Bake for 10-12 minutes or until the frittata is fully set and lightly golden on top.
7.
Remove from the oven and let it cool for a few minutes before slicing. Serve with coleslaw on the side.

4 large eggs

1 cup broccoli florets, chopped
3.
3 mozzarella cherry tomatoes, halved
4.
1/2 cup coleslaw mix (cabbage and carrots)
5.
1 tablespoon olive oil
6.
Salt and pepper to taste
7.
Optional: 1/4 cup chopped spinach for added fiber
