Restaurant: potato frittata small piece of watermelon. Calories 323 Protein 17g Fiber 17g. Enjoyed this lunch with a close friend to celebrate her 74th birthday. Was tempted to get a brownie but got watermelon instead. So glad.

Instructions

  • 1.

    Preheat your oven to 375°F (190°C).

  • 2.

    In a skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent (about 3-4 minutes).

  • 3.

    Add chopped broccoli and cook for another 3-4 minutes until slightly tender.

  • 4.

    Stir in the spinach and cherry tomatoes, cooking until the spinach wilts (about 2 minutes).

  • 5.

    In a bowl, whisk together the eggs, salt, and pepper. Pour the egg mixture over the vegetables in the skillet.

  • 6.

    Sprinkle the shredded cheese on top and cook for 2-3 minutes until the edges start to set.

  • 7.

    Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is fully set and lightly golden on top.

  • 8.

    Let it cool for a few minutes before slicing and serving.
