Good for you Ray on having your first protein and fiber-rich dinner this week. Youve taken a solid step towards your goal of four such meals this week. Your dinner of leftover rotini with roasted broccoli looks appetizing! Its great to see you incorporating fiber-rich broccoli into your meal which will help you feel full for longer. Since youve not mentioned when you plan to have your next protein and fiber-rich dinner Im curious to know when youre planning it. Having a plan will help you stay on track towards your weekly target.

Instructions

  • 1.

Preheat your oven to 400°F (200°C).

  • 2.

Toss broccoli florets with olive oil, salt, and pepper, then roast for 15-20 minutes until tender and slightly crispy.
