Instructions

  • 1.

    In a large bowl, combine ground lamb, garlic powder, onion powder, salt, and pepper. Form into patties (about 4).

  • 2.

    Heat olive oil in a skillet over medium heat. Cook lamb patties for about 5-6 minutes on each side until browned and cooked through.

  • 3.

    In another pot, sauté broccoli rabe and red bell pepper in a little olive oil for about 5-7 minutes until tender.

  • 4.

    Serve the lamb patties over black rice, topped with sautéed vegetables and a dollop of Greek yogurt.

    1 lb ground lean lamb

  • 2.

    1 cup cooked black rice

  • 3.

    2 cups broccoli rabe, chopped

  • 4.

    1 cup orzo, cooked

  • 5.

    1 red bell pepper, diced

  • 6.

    1 cup plain Greek yogurt (for serving)

  • 7.

    1 tablespoon olive oil

  • 8.

    Salt and pepper to taste

  • 9.

    1 teaspoon garlic powder

  • 10.

    1 teaspoon onion powder
