Instructions
1.
In a large skillet, heat a non-stick pan over medium heat. Add the broccoli rice and cook for about 5 minutes until tender.

Stir in the cooked brown rice, chopped spinach, cilantro, lime juice, salt, and pepper. Cook for an additional 3-4 minutes until the spinach is wilted.
3.
In a separate pan, scramble the egg whites over medium heat until fully cooked, about 3-4 minutes.

Combine the broccoli rice mixture with the scrambled egg whites, mixing well to combine all ingredients.
5.
Serve warm with a dollop of lite sour cream on the side.
