Good job Sanne! Youve successfully incorporated a fiber and lean protein-rich lunch into your week. This is a fantastic start towards your goal of having four such meals this week.

Instructions

  • 1.

Preheat your oven to 375°F (190°C).

  • 2.

Slice the tempeh into strips and marinate in Tamari for about 10 minutes.

  • 3.

Spread the tempeh on a baking sheet and bake for 15-20 minutes, flipping halfway through, until golden brown.

  • 4.

In a large bowl, combine broccoli slaw, diced avocado, sliced strawberries, chopped hazelnuts, and Parmesan flakes.

  • 5.

In a small bowl, whisk together avocado oil, vinegar, and mustard to create the dressing.

  • 6.

Pour the dressing over the salad and toss gently to combine.

  • 7.

Top the salad with the baked tempeh strips and serve immediately.
