Instructions
1.
Preheat your oven to 400°F (200°C).

In a large bowl, toss the diced chicken breast with olive oil, garlic powder, paprika, salt, and pepper until well coated.

Spread the chicken on a baking sheet and roast for 15 minutes.

While the chicken is roasting, prepare the vegetables. In a separate bowl, toss the butternut squash and zucchini with a little olive oil, salt, and pepper.
5.
After 15 minutes, add the vegetables to the baking sheet with the chicken and roast for an additional 15 minutes, or until the chicken is cooked through and the vegetables are tender.
6.
Serve the roasted chicken and vegetables over a bed of cooked lentils. For added fiber, mix in fresh spinach before serving.
