Instructions

Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sautéing until translucent (about 5 minutes).

Add diced butternut squash and cumin, stirring to combine. Cook for another 5 minutes.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the squash is tender.

Stir in the spinach and cook for an additional 5 minutes until wilted.

Use an immersion blender to puree the soup until smooth. Season with salt and pepper to taste.
6.
Serve hot, garnished with sliced hard-boiled eggs, cucumber, cherry tomatoes, and melon on the side.
