Instructions
1.
In a large bowl, combine the shredded cabbage, black beans, and optional chopped spinach.

In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
3.
Pour the dressing over the salad and toss to combine.
4.
Add the Brie cheese pieces and gently mix.
5.
Toast the whole wheat bread slices until golden brown and serve alongside the salad.

1 can (15 oz) black beans, rinsed and drained

4 oz Brie cheese, cut into small pieces
