Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

  • 2.

    Add minced garlic and sauté for 1 minute until fragrant.

  • 3.

    Add the shrimp to the skillet, season with salt and pepper, and cook for 3-4 minutes until they turn pink.

  • 4.

    Stir in the sliced green bell pepper and broccoli florets, cooking for an additional 3-4 minutes until the vegetables are tender.

  • 5.

    Remove from heat and stir in lime juice and black olives.

  • 6.

    Serve over a bed of cooked brown rice, topped with diced avocado and shredded lettuce.
