Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    Rice the cauliflower using a food processor or box grater until it resembles rice.

  • 3.

    In a large bowl, combine the riced cauliflower, beaten egg, Italian seasoning, salt, and pepper. Mix well.

  • 4.

    Spread the cauliflower mixture onto a parchment-lined baking sheet, forming a pizza crust. Bake for 15-20 minutes until golden brown.

  • 5.

    While the crust is baking, cook the lean ground turkey in a skillet over medium heat until browned. Add mixed vegetables and cook until tender.

  • 6.

    Remove the crust from the oven, spread the pizza sauce evenly over it, and top with the cooked meat and vegetable mixture.

  • 7.

    Sprinkle mozzarella cheese on top and return to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.

    Let cool for a few minutes before slicing and serving.
