Instructions
1.
Preheat your oven to 425°F (220°C).
2.
Rice the cauliflower using a food processor or box grater until it resembles rice.
3.
Steam the riced cauliflower for about 5 minutes until tender, then let it cool.
4.
Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.

In a bowl, combine the riced cauliflower, mozzarella, Parmesan, egg, garlic powder, Italian seasoning, and salt. Mix until well combined.
6.
Spread the mixture onto a parchment-lined baking sheet, shaping it into a pizza crust about 1/4 inch thick.
7.
Bake for 20 minutes or until golden brown.
8.
Remove from the oven, spread tomato sauce over the crust, and top with mixed vegetables.
9.
Return to the oven and bake for an additional 10 minutes.
10.
Sprinkle chia seeds on top before serving.

1/2 teaspoon salt
8.
1/2 cup tomato sauce (no added sugar)
9.
1 cup mixed vegetables (chopped bell peppers, mushrooms, tomatoes)
10.
1/4 cup chopped red cabbage
11.
1 cup chopped lettuce
12.
2 tablespoons chia seeds
