Instructions
1.
Cook the whole grain pasta according to package instructions. Drain and set aside (about 10 minutes).

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.

Add the minced garlic, broccoli florets, sliced mushrooms, zucchini, and bell peppers to the skillet. Sauté for another 5-7 minutes until the vegetables are tender.

Combine the cooked pasta with the chicken and vegetable mixture. Stir in the remaining olive oil and season with salt and pepper to taste.

If using, sprinkle the low-fat cheese on top and let it melt for a minute before serving.
