Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
3.
Coat the chicken breasts with the mixture and place them on a baking sheet.
4.
Bake the chicken for 20-25 minutes or until fully cooked (internal temperature of 165°F).
5.
While the chicken is baking, steam the broccoli, cauliflower, and carrots until tender (about 5-7 minutes).
6.
Once cooked, slice the chicken and serve it alongside the steamed vegetables.

Add sliced avocado and a dollop of hummus on the side for a creamy finish.

4 boneless, skinless chicken breasts (about 1.5 lbs)

2 cups broccoli florets
3.
1 cup cauliflower florets
4.
1 cup carrots, sliced
5.
1 ripe avocado, sliced
6.
1/2 cup hummus (low-fat, no added sugar)
7.
1 tablespoon olive oil
8.
Salt and pepper to taste
9.
1 teaspoon garlic powder
10.
1 teaspoon paprika
