Instructions

1. Cook the brown rice according to package instructions (about 20 minutes).

2. While the rice is cooking, heat olive oil in a large skillet over medium heat.

3. Add minced garlic and sauté for 1 minute until fragrant.

4. Season the chicken breast with salt and pepper, then add to the skillet. Cook for 6-7 minutes on each side until fully cooked.

5. Remove the chicken from the skillet and let it rest for a few minutes before slicing.

6. In the same skillet, add broccoli florets and a splash of water. Cover and steam for about 5 minutes until tender.

7. Add the sliced chicken back to the skillet, drizzle with soy sauce, and stir to combine.

8. Serve the chicken and broccoli over a bed of brown rice, and add spinach if desired.
