Instructions

1. Preheat your oven to 400°F (200°C).

2. Season the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.

3. Place the chicken on a baking sheet and bake for 20-25 minutes, or until cooked through and juices run clear.

4. While the chicken is baking, cook the quinoa according to package instructions (usually about 15 minutes).

5. In a separate pot, steam the broccoli florets for about 5-7 minutes until tender but still bright green.

6. In a bowl, combine the cooked quinoa and black beans, mixing well.

7. Once the chicken is done, slice it and serve it alongside the quinoa and black bean mixture, steamed broccoli, and a dollop of hummus.
