Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).

Add minced garlic and ginger, sauté for 1 minute until fragrant.
3.
Add chicken pieces to the skillet, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through.

Stir in broccoli, cabbage, and carrots, cooking for another 5 minutes until vegetables are tender but still crisp.

Pour in soy sauce and stir to combine, cooking for an additional 2 minutes.
6.
If using, add spinach and cook until wilted, about 1 minute.
7.
Serve hot and enjoy your healthy chicken and broccoli dish!
