Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a large bowl, toss the Brussels sprouts with 1 tablespoon of olive oil, garlic, salt, pepper, and paprika.

  • 3.

    Spread the Brussels sprouts on a baking sheet and roast for 20 minutes, stirring halfway through.

  • 4.

    While the Brussels sprouts are roasting, season the chicken breasts with salt, pepper, and lemon juice.

  • 5.

    In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chicken and cook for 6-7 minutes on each side until fully cooked.

  • 6.

    If using spinach, add it to the skillet during the last minute of cooking to wilt it.

  • 7.

    Serve the chicken alongside the roasted Brussels sprouts.
