Instructions
1.
Preheat your oven to 400°F (200°C).
2.
In a large bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
3.
Add the chicken breasts to the bowl and coat them evenly with the mixture.
4.
Place the chicken on a baking sheet lined with parchment paper.
5.
In the same bowl, add the sliced carrots and toss them in the remaining oil mixture.
6.
Spread the carrots around the chicken on the baking sheet.
7.
Bake for 20-25 minutes, or until the chicken is cooked through and the carrots are tender.
8.
If using spinach, add it to the baking sheet for the last 5 minutes of cooking.
9.
Remove from the oven and let it rest for a few minutes before serving.
